Domaine Pastou is a traditional, family-run estate located in the village of Sury-en-Vaux within France's renowned Sancerre region. Founded by Paul Pastou and now managed by his son Jean-Marc, the winery focuses on producing pure, unadorned Sauvignon Blanc and a small amount of Pinot Noir. The estate covers roughly 15 hectares of vines, which are planted on high-altitude, clay-limestone and flint-rich slopes that give the wines their characteristic chalky minerality.
