Based in the Vallée de la Marne, Champagne Cazé-Thibaut is led by tenth-generation winemaker Fabien Cazé, who works just over two and a half hectares of vines selected from his family's holdings. The estate is committed to environmentally conscious, organic viticulture and traditional craftsmanship, with all vineyard work done by hand. A proponent of long lees aging, Fabien produces precise, elegant, and terroir-transparent Champagnes using native yeasts and old oak barrels. His minimalist winemaking has earned him a place in the prestigious "Terre et Vins" collective, alongside other notable producers.
