Founded in 1707 in Galicia’s Salnés Valley, Bodega Zárate is a historic estate that pioneered the modern production of high-quality, long-lived Albariño. Today, seventh-generation winemaker Eulogio Pomares manages the property, cultivating the estate's vines with biodynamic methods and natural cover crops. The fruit for this flagship bottling is meticulously hand-harvested from estate vineyards in the coastal parishes of Sisán and Padrenda, where the vines average 35 years of age. These ancient plots sit on undulating slopes of poor, weathered granite soils—known locally as xabre—and are heavily influenced by the cool climate and intense Atlantic humidity. This unique marine terroir naturally restricts grape yields, imbuing the wine with its signature laser-like acidity and exceptional flinty minerality.
