"'We enjoy wines that are as natural as possible.' In the South Styrian Sausal, we cultivate 20 hectares of vineyards according to biodynamic guidelines. On diverse slate and shell limestone soils, we create taut, straightforward, mineral wines and sparkling wines, which have been Demeter certified since the 2019 vintage.
Our special passion lies in producing elegant vintner’s sparkling wines using the traditional bottle fermentation method. Here, too, biodynamic cultivation plays a crucial role."

This is a traditional method sparkling wine made from certified Biodynamically grown Sauvignon Blanc grapes. It is grown on limestone based soils, and spends roughly 12 months on tirage lees after secondary fermentation.
