"Tropa Salvaje ("Wild Herd") is an heroic gamble on Mendozan Viticulture. Oenologist José Luis Miano and Juan Pablo Michelini, a celebrated Mendozan winemaker well known for his creativity, have planted terraced vineyards in the Rhône style. Organically grown Malbec and Cabernet Sauvignon, along with old vine Pedro Ximénez, form the core wines of the project. Tropa Salvaje is a tribute to the family's twin passions: thoughtful, patient winegrowing and their work in continuing the lineage of Argentina's native Criollo horses. The result is a portfolio of utterly original wines fashioned by hand that celebrates their homeland's finest attributes."

About the cuvee:

Made from a single 5 hectare vineyard in Lujan de Cuyo, Cabernet "de sed" is a unique example of Cabernet made utilizing carbonic maceration. It is fermented in concrete tanks, and aged briefly in tank on the lees prior to release. The result is an uncommonly bright, juicy and refreshingly example of Cabernet.

Winemaking
Whole cluster Cabernet grapes undergo carbonic maceration and primary fermentation in concrete tanks. The wine is then briefly aged on the lees for two months prior to bottling.
