Operating from the village of Alf, he is a passionate defender of historic viticulture and works entirely by hand on sheer cliffs that defy modern mechanization. The fruit for this specific wine is sourced from the Palmberg, a dramatic cliff face of solid blue and gray slate that Stein considers his crown jewel or "Grand Cru" site. Positioned near a cooling side-stream, this cooler microclimate features ungrafted, ancient vines (Alte Reben) over 80 to 90 years old. These deep-rooted vines pierce the dense rock to yield a dry Kabinett with unmatched mineral intensity, laser-sharp acidity, and profound flavor concentration.
