Since its inception in 2000, winemaker Cédric Bouchard and his domaine Roses de Jeanne had the foresight to embrace terroir-driven expressions of Champagne. Bouchard’s impact was immediate, and soon many began to join him in his philosophy of single vineyard, single variety, single vintage, and zero dosage Champagne. Today he now crafts 7 cuvées in this manner and continues to dramatically restrict yields and emphasize cooler second fermentations in the cellar to create a more vinous leaning style. This 'Les Ursules' comes from nearly 40-year-old Pinot Noir plantings situated in the village of Polisy. Enticing aromas of orchard fruit, dried roses, mandarin zest, phyllo dough and hints of rhubarb lure you in. Medium bodied with soft fine bubbles that dance over a broad silky texture before a bone-dry finish leaves a chalk, fruity and slightly flinty impression. This cuvée is normally the first to be released by Bouchard and serves as a vibrant introduction to this house’s style.
