"This blend combines pinot noir and chardonnay varietals, essentially an Italian Blanc de Noirs.

My "Ombra" has a short aging ("short" compared to my standards) of 2 and a half years, or "30 moons", and is strongly identifying. As in all my wines, no sulfites are added to this one either. An essential brut, I would say. An unusual brut: no bread crust but hints of fruit and a sharp minerality.."
