Rather than following the conventional path of monoculture Pinot Noir rosé, this sophisticated Flatiron Wines & Spirits favorite utilizes an unconventional, low-intervention cepage of 40% Gamay Noir, 30% Dolcetto, and 30% Pinot Noir. The intentional inclusion of later-ripening varieties allows the winemakers to achieve complete phenolic ripeness while preserving a foundational, electric natural acidity. This creates a serious, bone-dry "dinner table" rosé that trades translucent poolside simplicity for genuine structural integrity, complex texture, and varietal transparency.
