Les Vins Pirouettes is an innovative winemaking collective founded by Alsatian natural wine legend Christian Binner to support independent vignerons transitioning to organic and biodynamic farming. The project sources organic grapes from diverse, micro-plot family vineyards scattered across Alsace, showcasing the region's complex mosaic of granite, limestone, and clay terroirs. In the cellar, each partnering grower crafts their own cuvées using a strictly low-intervention philosophy that champions wild yeasts and spontaneous fermentations. The wines are aged naturally in traditional large oak casks (foudres) or stainless steel tanks before being bottled unfined and unfiltered. Crucially, this collaborative process avoids all additives, resulting in vibrant, zero-sulfite natural expressions that capture the pure essence of individual Alsatian growers.
