Founded in 2001 by namesake winemaker Filipa Pato and later joined by her husband, chef-sommelier William Wouters, this dynamic estate operates from the medieval village of Óis do Bairro with a mission to craft authentic Bairrada wines "without makeup". The duo champions minimal-intervention winemaking, farming their estate under strict Demeter-certified biodynamic protocols to showcase the pure coastal terroir of Portugal’s Atlantic edge. For the 'DNMC' Baga, fruit is carefully sourced from a patchwork of distinct, limestone-rich village vineyards scattered across the region. This collection features a balance of traditional 40-year-old bush vines alongside younger parcels propagated via massale selection from centenary Baga plants. By combining these diverse, ocean-influenced locations, the winery captures a multi-layered and highly complex expression of the Baga grape that remains vibrant, mineral-driven, and incredibly fresh.
