El Hato y el Garabato is a small, artisan winery located in the rugged Arribes del Duero region of western Spain, where José Manuel Beneitez and Liliana Fernández focus on minimal-intervention winemaking. For their Nat Cool tinto, they source grapes from old, high-altitude vineyards planted in the granitic and slate soils of the Arribes del Duero Natural Park. This wine prominently features Juan García, a rare indigenous variety celebrated for its bright acidity and delicate red fruit profile, occasionally blended with other local grapes like Bruñal or Rufete. By working with vines that are often over 80 years old, the winery captures the rustic elegance and fresh, herbal character unique to this "last frontier" of Spanish viticulture. Their philosophy centers on organic farming and preserving ancestral plots to produce unpretentious wines that are deeply rooted in their landscape.
