Impressions: A fantastic refreshing Crémant de Bourgogne from a winemaker that prevailed against horrible odds yet still produces amazing cuvees with a contagiously positive attitude. Notes of delicate red berries and green apple skins, red currant, yellow pear, pink lady apples, and toasted almonds. On the palate, sharp, prismatic bubbles expand revealing subtle tones of chalk lending their way to a lengthy finish with mineral driven characteristics. Try with a variety of raw seafood dishes, caviar with bellinis, or little gems salad with strawberries.

 About the Producer: Dominique Gruhier did not have an easy start, all his vineyards froze in 1991 producing no crops to speak of for the year, then the year following his father’s newly purchased winery was burned down in an act of arson. His father rebuilt the winery, but unfortunately a backhoe driver’s mistake made the cellar collapse. The same year Dominique took on a series of clients who sent him fruit to vinify. He paid to use old tanks that were supposed to be treated with a special coating, yet it was never applied, resulting in all the wine smelling like burnt trashcans. This started 7 years of lawsuits and put the Domaine on pause until 2003 when Dominque was able to recover and rebuild his Domaine.
