Now managed by siblings Clarisse and Xavier Dhommé, the winery focuses on low-intervention practices and manual harvests to highlight the purity of traditional Anjou varieties. The fruit for "Les Cottereaux" is sourced from specific vineyard plots characterized by clay-loam soils over a base of brown and black schist, featuring unique streaks of quartz and sandstone. These ancient, well-drained terroirs and the maritime-influenced microclimate provide the "crunchy" acidity and distinct mineral finish that define this rare Pineau d'Aunis.
