About The Producer: Santo Wines was originally founded in 1911 as “Santorini Vine & Wine Protection Fund”; today it is a cooperative run winery with over 1,200 people involved in the project. The traditional cultivation methods employed by the farmers ensure the authenticity and high quality of the fruit that is grown to make the cuvees. They invest in the ongoing research and development of cultivation and vinification techniques to make their wines better each year from vine to cellar.
Impressions: A refreshing yet textural island Assyrtiko that will elevate any end of summer meal with its concentrated midpalate and mouthwatering finish. Aromas of salty sea breeze, Meyer lemon zest, passionfruit, and flint leap from the glass. The palate is revealing, condensed, and balanced with racy acidity ushering in notes of white nectarine, peach, and citrus before revealing a mineral driven and bone-dry finish with subtle honey undertones. Pair with a variety of shellfish dishes or try with the most popular Grecian pairing: tomato and feta salad.
