"Independent vigneronne Clotilde Davenne built her 8.5-hectare domaine in the Yonne, parcel by parcel over the last decade, while simultaneously working as the chef oenologue for the prestigious Chablis house of Jean-Marc Brocard. Her dream had always been to have her hands on all aspects of the production and as a grower she is now fully integrated into the life of each of her wines, from bud break to bottle. The results are soulful, expressively vibrant wines that uniquely speak of the particularity of their origin. Many come from extremely old and deep-rooted, low-yielding vines, and viticulture is practiced with great respect for the environment and no filtration is used prior to bottling.

Clotilde's Cremant de Bourgogne is a blend of 60% Chardonnay and 40% Pinot Noir. It is a wine bursting with youth and audacity with an abundance of freshness and vigor. The Extra Brut faithfully reflects its lively and clear-cut personality. The bubbles are fine and form a delicate necklace around the edge of the glass. Floral, citrus and mineral aromas are matched in the mouth by freshness and elegance plus, a tight acidity which balances the aromatic power and light, elegant mouthfeel."

Winemaking
The spontaneous fermentations are controlled and kept under low temperature, in stainless steel vats. They are then filtered, blended and bottled. After 18 months on laths, the wine is disgorged without expedition liquor, resulting in Extra Brut.
