This is a terroir-driven white wine that showcases the vanguard of the Canary Islands' natural wine movement. Crafted by the third-generation trio of Fernando, Tomás, and Carmen Mesa, this bottling functions as the estate's "vino de pueblo" (village wine). Rather than chasing the trendy, intensely reduced, "struck-match" excess common to some high-profile Tenerife whites. The blend incorporates fruit from 8 to 12 distinct heritage parcels across the valley, dominated almost entirely by old-vine Listán Blanco (genetically identical to Andalusian Palomino) with a tiny 2–3% field blend inclusion of Albillo Criollo.
On the palate, this completely bone-dry white offers a fascinating structural tension that will immediately thrill Canary enthusiasts. It opens with luxurious, high-toned aromas of sumptuous apricot, fresh almonds, jasmine, and citrus zest, all framed by an unmistakable volcanic energy. The palate is taut, nimble, and highly kinetic, showcasing a lean, medium-bodied frame packed with a deeply savory, mouth-watering salinity and fine-grained, grippy phenolics on the finish. It neatly balances its native high acidity with a texturally rich mid-palate, avoiding any flabby weight. Altitudinal gradient from 300 up to 1,000 meters above sea level along the eastern slopes of Tenerife's active volcano, Mount Teide. The soils are dominated by jable (a porous, white volcanic ash and pumice sand) mixed with patches of dense, moisture-retaining clay.
Winemaking
Native yeast ferment entirely in temperature-controlled tanks to maximize the varietal purity of the Listán Blanco. The wine then experiences a careful split-élevage, aging for six months in 90% stainless steel and 10% neutral French oak barrels.
