Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, Champagne Billecart-Salmon is a legendary, independent house in Mareuil-sur-Aÿ that has prioritized quality and meticulous craftsmanship for seven generations. To achieve the precise and elegant profile of their iconic ‘Le Rosé’ Extra Brut NV, the house carefully selects fruit from prime sub-regions across 40 distinct Crus. The foundational blend typically consists of 40% Chardonnay, 30% Pinot Noir, and 30% Pinot Meunier to balance bright freshness with structured red fruit character. The Chardonnay is sourced from the finest Crus of the Marne, while the Pinot Noir is harvested from the historic chalky slopes of the Montagne de Reims and the Grande Vallée de la Marne. Finally, the Pinot Meunier is systematically brought in from the microclimates of the Vallée de la Marne and the southern slopes of Épernay to round out the wine's signature silky texture.
