Founded in 1980 by three friends whose last-name initials form its acronym, Azienda Agricola COS is a boutique estate that pioneered the natural wine renaissance in southeastern Sicily. The winery is globally renowned for its strict adherence to organic and biodynamic viticulture, completely avoiding synthetic chemicals to let the indigenous grapes express their truest character. For the creation of the Rosa di Lupo rosato, the estate sources 100% Nero d'Avola grapes from their estate vineyards located in the Vittoria region of the Val di Noto. These specific vines are cultivated at an elevation of 230 meters above sea level, thriving in a distinctive terroir composed of sandy, chalky limestone and sedimentary clay soils. This high-altitude positioning combined with the mineral-rich soils allows the winery to preserve a vibrant, sun-kissed freshness and crisp Mediterranean acidity in every bottle.
The Nero d'Avola spends just a few hours on the skins producing a lovely mix of pomegranate, wild strawberries, blood orange and a touch of hibiscus. 2025 is the inaugural vintage for this rosato.
