Domaine Simon Bize et Fils is a highly regarded, multi-generational family winery in the heart of the Savigny-lès-Beaune appellation, known for producing wines that are a reference point for the village. The estate, founded in the late 19th century, gained an stellar reputation under Patrick Bize, who passionately advocated for a classic, age-worthy style of Burgundy, utilizing partial whole-cluster fermentation and minimal new oak. Since his sudden death in 2013, his wife Chisa Bize has taken the reins, continuing his legacy while implementing a gradual transition to organic and biodynamic practices in the vineyards. Today, the domaine crafts pure, elegant, and complex Pinot Noirs and Chardonnays across 22 hectares of top sites, including several Premier and Grand Crus.

"Aux Vergelesses" is a highly esteemed Premier Cru vineyard in the Savigny-lès-Beaune appellation, situated on steep, sun-drenched slopes with excellent exposure to the north wind. The soil is a distinctive mix of sandy marl at the base and iron-rich oolite higher up, a terroir that produces complex, energetic, and age-worthy Pinot Noir wines.
