There are wines bottled at different pressures. There are wines bottled with different levels of dosage, as in Brut, Extra Brut, or no dosage at all. This pack features 3 standout Champagnes, each of which highlight the main grapes used for production: Chardonnay, Pinot Meunier and Pinot Noir. 

Champagne Pertois-Lebrun, 'L'Extravertie' Blanc de Blancs Extra Brut NV
Fifth-generation growers Antoine and Clément Pertois-Lebrun continue the family's legacy of crafting exceptional Blanc de Blancs from Grand Cru vineyards in the Côte des Blancs. 'L'Extravertie' grapes are sourced from a blend of 7 Cru sites icluding Grand Cru's Cramant, Le Mesnil-sur-Oger, Chouilly, Oger, and Oiry, along with the premier cru's Cuis and Villeneuve. This is a lively, chalky and expressive style with a low dosage of 3g/L.

Champagne Christophe Mignon, 'ADN de Meunier' Brut Nature NV
A descendent of a long line of farmers, Christophe Mignon is a true conduit of the land and his unique approach to viticulture combines his own extension of biodynamics to include homeopathy, geobiology, and phytotherapy. His vines are spread among thirty parcels between the villages of Le Breuil and Festigny in the Vallée de la Marne. These terroirs are prime land for Pinot Meunier, which Mignon picks at optimum ripeness to allow for little, if any, dosage. Intense notes of white plums, rhubarb, and croissants evolve from the glass. The mousse formed is elegant and starts the descent towards a long, chalky, bone dry finish with lasting notes of hibiscus and underripe strawberries. Truly a special wine proving once again that Mignon is a master of Pinot Meunier. Bone dry with no dosage, and an equal parts blend of Meunier from the 2021 & 2020 vintages.

Champagne Frederic Savart, 'L'Ouverture' Premier Cru Extra Brut NV
"Maison Savart describes itself as a producer of "auteur" wines. Lying 10 km west of Reims, the domain is in the village of Ecueil which has specialised in growing Pinot Noir for many years. L'Ouverture is Fred Savart's entry level Champagne but it is far from one-dimensional. It is 100% Pinot Noir all from the village of Ecueil, half of which was fermented in mostly neutral barrel with the other half is fermented in stainless steel. The wine only sees partial malolactic fermentation. Such thoughtful cellar work provides us with a texturally complex wine that entices you with fragrant, complex notes of golden apple, poached pear, and fresh brioche, leading to a palate that balances the richness of orchard fruit with a delicate, saline minerality. It is a driven and framed by a brisk, racy acidity and a pinpoint mousse that culminates in a long, dry, and mouthwatering finish with hints of lemon zest and baking spices. Disgorged in September 2024 with a low dosage of 3g/L.
