"Domaine Camille & Laurent Schaller is a family estate based in Préhy, a village in the heart of the Chablis vineyards. Laurent and his son Camille cultivate three grape varieties: Chardonnay, Aligoté and Pinot Noir. Their parcels are located in the villages of Préhy, Courgis, Chablis, Poilly sur Serein, Chichée (Premier Cru Vaucoupin) and Beine (Premier Cru Vau de Vey).
The vines are planted in a clay and limestone soil which is typical of Chablis. It brings to wines great finesse, minerality and purity. The Schaller family cultivates its vines using sustainable practices, working the soil to avoid the use of herbicides."
About the cuvee:
Schaller's Cremant de Bourgogne is made in the traditional method, with secondary fermentation in bottle and aging on tirage lees for at least 9 months. It is blend of 12% Chardonnay, 33% Aligote, and 55% Pinot Noir, bottled with a brut dosage of just under 7 grams per liter.
It strikes a lovely balance of ripe golden apple and lively, fresh lemon fruits, with a soft, gentle, mouth-coating mousse.
