Located in the Prepotto subzone of Friuli Colli Orientali, Ronco Severo is an artisanal estate led by Stefano Novello, who shifted the family farm toward natural, non-interventionist winemaking in the late 1980s. The winery’s 8 hectares of certified organic vineyards are planted on unique "ponca" soil—a mineral-rich mix of marl and sandstone that imparts a distinct structure to the grapes. For the 2018 Pinot Grigio, Novello employs a traditional "Ramato" style, allowing the late-harvested fruit to undergo an extended maceration of approximately 30 to 38 days in truncated oak vats. This lengthy skin contact, performed without temperature control or added yeasts, creates a powerful orange wine defined by its deep copper hue and complex tannins. The final product is aged for nearly two years in Slavonian oak and bottled unfiltered, preserving the raw expression of the Prepotto terroir.
