Thomas joined his father Jean-March Bouley at the family domaine with the goal of making it one of the finest in Volnay. He took over fully in 2012 and the ascendant path is being paved. He focuses much attention on the vineyard to encourage the vines to be at their peak. No fertilizer is used, no systemic treatments, no green harvesting, and hedging as late as possible after flowering. This gives him a greater number of smaller bunches, with a better skin-to-juice ratio. The goal is an equilibrium where each vine, younger or older, is producing high quality fruit. 

From 5 parcels facing southeast: Les Blanches 2/3 from lower slope (deeper clay soils) and 1/3 from upper slope situated above Clos des Chênes (shallow limestone soil). Vines planted in 1960-2, 1975, 1984-7, 1990-9. 100% Fruit was de-stemmed,  indigenous yeast fermentation in concrete or stainless steel tank. Punch-downs, pump-overs, minimal added sulfur. Aged for 18 months on fine lees in barrel (10-15% new). Fined as wine is transferred to tank pre-bottling.
