"Thomas joined his father Jean-March Bouley at the family domaine with the goal of making it one of the finest in Volnay. He took over fully in 2012 and the ascendant path is being paved. He focuses much attention on the vineyard to encourage the vines to be at their peak. No fertilizer is used, no systemic treatments, no green harvesting, and hedging as late as possible after flowering. This gives him a greater number of smaller bunches, with a better skin-to-juice ratio. The goal is an equilibrium where each vine, younger or older, is producing high quality fruit.
Vineyard parcel is Upper slope, facing southeast, soil has a stony surface, clay and limestone underneath, that was planted in 1951 and 1971. Some whole-cluster pressing. Aged for 18 months on fine lees in barrel (20% new oak)."
