"From En Charlemagne, southwest-facing, silty-limestone marl. Practicing organic viticulture. Pressed with whole clusters and cold settled for 24 hours. Ambient yeast fermentation and aging for 12 months in barrels (60% one-year-old, 40% new). No battonage. Racked and aged for an additional 6 months in tank. No fining, no filtration."
