Cuvées only (1st pressing), alcoholic fermentation at 17°C, malolactic fermentation, aged on fine lees for 10 months in stainless steel vat, natural clarification (no fining and filtration). Spends at least 6 years on the lees. Bottled with 2 g/litre as Extra Brut.
