Established in 1964, the Hébrart domaine has built a reputation as one of the finest producers in the Grand Vallée. Jean-Paul Hébrart has been the head winemaker since taking over for his father in the mid-1990’s and has shifted the focus of the estate to highlighting the individual parcels of old vines located in the estate owned vineyards within the Grand Cru sites in Aÿ, Avize, Chouilly and Oiry as well as their holding in the Premier Cru’s Mareuil-sur-Aÿ, Avenay, Val d’Or and Bisseuil. Each of these parcels are vinified separately in order to understand what each site’s particular vintage has to say. These are champagnes of great consistency and quality.

"The 2018 Extra Brut Blanc de Noirs Noces de Craie is a powerful, vibrant Champagne that lives up to its name. Layers of deep, resonant Pinot fruit wrap around the palate, all framed by incisive veins of chalk that give the wine its shape and overall structure. There's tremendous weight and substance here, both commendable for a year in which so many Champagnes are on the lighter side. Dosage is 5 grams per liter. Disgorged October 10, 2022".
