At the helm of Les Horées, Sadde has conjured a cult following, not through loud proclamations, but through an intimate understanding of the land and a reverent nod to tradition. Established in 2018, Les Horées quickly became a beacon for enthusiasts seeking purity and expression in their wines. "From a northeast-facing, cool, late ripening site. Purchased grapes, organic and biodynamic (not certified), plowed by horse. All of the farming done by Catharina since 2022.
The name "Les Horées" derives from Greek mythology. Catharina Sad (owner/winemaker) says there are many different interpretations, but she describes "Les Horées" as marking the change in seasons. The goddesses of the seasons are called "Horae" (hours)."
