This is Chardonnay from a 1.7-hectare family plot located in Burgundy's Tonnerre region, near Chablis, with distinctive Kimmeridgian marl-limestone soils. What distinguishes this bottling is its maturation in an egg-shaped concrete vat ("ovoide"), a technique that promotes natural yeast mixing and creates a round, aromatic wine with a subtle creaminess, while still maintaining the fresh, mineral character of the terroir.
Jérémy Arnaud is a rising star in Burgundy, hailing from a Chablis winemaking family but establishing his own domaine in 2016 to pursue his own vision. An alumni of the Lycée Viticole in Beaune, he gained valuable experience working in various renowned cellars before purchasing his first plot. Arnaud is dedicated to a strict ecological approach, with a commitment to biodynamic and minimal-intervention farming to let the vineyard's unique terroir shine through in the final wine. In the cellar, he uses natural fermentation, avoids filtration, and limits sulfur, creating deep, energetic, and authentic wines.
