"The small, family-run winery on the Eichberg has been under the management of Daniel for around 20 years, making it the second generation to run the business. His wife Jasmin has been assisting him since 2016 and, as a career changer, brought with her a wealth of ideas and visions.
Our vineyards on the Eichberg are located at 550 meters above sea level and are characterized by the cool climate (influenced by the Koralm) and the soil composition (gravel, sand, weathered rock). Currently, 7 hectares of vineyards are cultivated – organically since 2016, and currently in the process of converting to biodynamic farming (Demeter).
Surrounded by forests, our vineyards are so-called kettle-shaped sites. We utilize this climatic advantage (protection from wind and extreme frost) not only for viticulture. Our focus in the vineyard is on a gentle, nature-oriented approach with minimal use of machinery. Our loaned sheep provide a little assistance with mowing from spring to fall.
In the cellar, too, it's important to stay true to the natural approach – gentle processing, spontaneous fermentation without pure yeasts, no fining, and the smallest possible addition of sulfur. "Grape juice," as pure as possible. The highest-quality grapes come from the KNILY and MURI vineyards. These are south-/east-/west-facing sites with well-rested vines aged 25 to 45 years. The time factor is also essential in the vinification process."
