I Custodi are the keepers, the guardians of Mt. Etna’s vineyards: to guard means to preserve the land, to maintain the traditions and to respect the people. From these values and from the love for a beautiful land, where the vine was brought by man more than two millennia ago, spring the wines of I Custodi, the result of the generosity and the minerality of the warm volcanic soil, the cold of the Muntagna and the sun of Sicily.

Healthy vines of all ages, growing densely on ancient dry stone terraces, supported by their stake in chestnut wood, are cultivated in harmony with the environment that surrounds them only by manual labor of I Vigneri, skilfull Etnean winegrowers. Winegrowing as it has always been on Mt. Etna for centuries, without synthetic chemicals, in respect of the people, the landscape and the nature.

Cuvee notes from the producer: 

"The term 'Saeculare' recalls the Latin concept of 'saculum,' which does not exactly correspond time necessary for our “century.” Instead, it denoted the period of a complete replacement human population. of This concept is reflected in the old Etnean vineyards, as each vineyard resembles more like a city, with old, young and newborn next to each other. representing the diversity of the old Our 'Saeculare' takes inspiration from this idea, Etnean vineyards, where new generations of vines mingle with the old."

Winemaking
The grapes are harvested by hand, with careful sorting and placed in low crates to be brought intact to the winery, where they are destemmed (80%) and crushed. Maceration continues for 12 days in special steel tanks. After racking, the wine is put into 500-liter tonneaux where malolactic fermentation takes place. Aging: about 24 months in used tonneaux, with at least 24 months in bottle.
