Made from 100% organically farmed Chardonnay harvested from younger estate vines, this zero-dosage cuvée showcases a striking chiseled precision.
The Chardonnay vines span several distinct, sloped estate plots heavily defined by the classic Jura geological profile of triassic marly soils, heavy clay, and broken limestone. This ancient, mineral-dense sub-surface, combined with the region's continental climate, imparts an unmistakable structural tension and deep-seated salinity to the base wine.
On the nose, it balances pristine white flowers and crisp green orchard fruits with a signature Jurassien twist of hazelnut, waxy texture, and faint, complexly integrated oxidative undertones. The palate is focused and vibrant, driven by fine, energetic bubbles and a underlying briny minerality that yields a long, savory, and remarkably saline finish—making it an ideal match for Comté cheese, raw shellfish, or rich, smoky fish.
