About the cuvee:
"100% Chardonnay. ‘Le Meix Cadot’ is made up of three lieu-dits: ‘Le Meix Cadot,’ ‘La Chaume’ and ‘La Bergerie.’ (A “meix” means farmland; Cadot was probably the name of the farm’s owner.) All face east; the plots are particularly sunny and ripen early. Vines planted in 1975, on soils that mix limestone and clay."

Hand-harvested. Pressed full cluster; lees settling for 48hours. Fermented by indigenous yeasts in French oak barrels (20% new).
Aged for 12 months in barrel, then six months in tank. Bottled unfined and unfiltered; all work follows the lunar cycle.
