Founded in 2016 by agronomists Maya Sallée and Nicolas Fernandez, Domaine La Calmette is a 7-hectare estate at the forefront of the natural wine movement in Cahors, France. Located in the high-altitude village of Trespoux-Rassiels, the winery utilizes certified organic and biodynamic practices to cultivate 40-year-old vines rooted in iron-rich clay and Kimmeridgian limestone. Their low-intervention winemaking style—featuring ambient fermentations and minimal sulfur—redefines the region's traditionally heavy Malbecs into fresh, vibrant, and terroir-driven expressions. In addition to their acclaimed reds, they are actively reintroducing white varieties to the plateau to restore the historical diversity of the appellation.
