A brilliant, intellectual alternative to entry-level Champagne, offering a fascinating intersection of Champenois technique and southwestern French history. The estate was founded by Philippe Collin, a native of Champagne who relocated to Limoux due to the prohibitive cost of land in his hometown, bringing generations of traditional sparkling expertise to the birthplace of French bubbly. For your geeky clients, the real draw here is the sophisticated cépage: a traditional method blend of 50% Chardonnay, 40% Chenin Blanc, and 10% Pinot Noir. Rather than relying heavily on the green, rustic traits of the region's indigenous Mauzac, Collin emphasizes Chardonnay for linear energy and borrows the honeyed, high-acid textural weight of Chenin Blanc. Critically, this wine is finished at a bone-dry, exceptionally low dosage of just 6 grams of residual sugar per liter, a stark contrast to the higher, masking dosages found in many commercial Crémants.
On the palate, this non-vintage sparkler punches well above its weight class, offering a precision-driven, 91-point Wine Review Online rated profile marked by a fine, elegant mousse. The dominant Chardonnay establishes a razor-sharp, citrus-led framework of lemon zest and crisp green apple. The substantial portion of Chenin Blanc fills the mid-palate with an expansive, mineral-tinged richness, showing notes of pear, white blossoms, and a subtle autolytic hint of delicate brioche from bottle aging. A faint textural shadow of red fruit weight from the Pinot Noir anchors the back end, culminating in a bone-dry, highly linear, and refreshing finish dominated by wet-stone minerality. It represents a highly transparent, acid-forward expression that successfully honors classical northern French structure while capturing the unique warmth and phenolic ripeness of the Languedoc foothills.

Flor Impressions:

Philippe Collin is a Champagne native who brought his family’s traditional expertise to the high-altitude, limestone-rich terroirs of Limoux. The nose opens with expressive aromas of crisp green apple, fresh pear, and subtle notes of wet stone. On the palate, a lively acidity and fine, creamy mousse are balanced by a delicate touch of toasted brioche from extended lees aging.

Soil
Nestled in the foothills of the Pyrenees within Limoux, the coolest, most inland subregion of the Languedoc. Positioned at a high elevation, the vines experience a rare macroclimate where damp Atlantic currents clash with warm Mediterranean breezes. Massive diurnal temperature swing that slows ripening, while the fast-draining deep-rooted clay-limestone, sandstone, and gravelly soils.
Winemaking
Méthode traditionnelle (secondary fermentation in the bottle), the base wines undergo separate, temperature-controlled vinifications in stainless steel without chemical intervention. No malolactic fermentation. Following blending and tirage, the wine undergoes extended lees aging in the cellar for 12 to 15 months to integrate its fine carbonation and develop autolytic complexity before receiving its precise, low-intervention 6 g/L Brut-level.
