"Recently elevated to the rank of “cru du Languedoc-Roussillon”, the stunning and remote Terrasses du Larzac AOC is the gateway to France's Massif Central. These high foothills run hot during summer afternoons, but diurnal swings can be dramatic, earning the sub-region its reputation for combining generous fruit with a sub-alpine freshness and sophistication. Here, round cherry and bramble are joined by black olive and fresh herbs on the nose, followed by a rustic, unctuous palate. Organically farmed but not certified.
Their full name "CastelBarry Coopérative Artisinale" says it all: a collective of small, artisinal growers utterly devoted to the environment, this inspired group of winemakers hails from one of the rugged, far-flung corners of the Languedoc, where copious amounts of sunshine and cool alpine breezes combine for wines of true poise and sophistication."
Le Salut de la Terre is a blend of 60% Grenache, 30% Syrah and 10% Mourvedre, grown sustainably (certified by Terra Vitis) and aged for 12 months in concrete to preserve varietal characteristics.
