Notes from Champagne Characters:

"Maxime Ullens de Schooten and his partner Anna launched the first champagne from their newly founded winery in 2019. The following year, the title of "Winemaker of the year" from the renowned Gault Millau followed. A new star in the champagne sky was born. Domaine de Marzilly is located in the northernmost part of Champagne, a good 10 km from Reims.
Max, originally an architect, had restored the historic castle of the same name by then, found old rootstocks that had been spared from phylloxera and decided to study viticulture in Avize and become a winegrower.

Free from family or tradition-related obligations and still connected to them, the two developed an incredibly sure feeling for the highest quality and cultivate the greatest appreciation and respect for nature. Their champagnes are all aged in 205 liter barrels, the original size in Champagne. The wood for this is felled in the forests directly surrounding the vineyards. Maxim's passion for aging in wood, in close cooperation with his local cooper, resulted in a highly precise study of this subject, which is not given much attention in Champagne. You can feel the passion and vision of Max and Anna with every word, every gesture. And taste the high level of professionalism with every sip of their remarkably exciting and animating champagne."
