Winemaking
Fermentation in a mix of stainless steel tanks and neutral oak barrels, After blending with a small amount of still red wine and undergoing the required secondary fermentation in the bottle, the wine ages on its lees for an extended period, which builds complexity before disgorgement with a low, extra brut dosage.
