"In 2018, the young Elise Bougy took possession of her family's estate in Les Mesneux, marking the beginning of a new chapter in her journey. Having pursued business studies in Dijon and viticulture studies in Champagne, followed by a stint in wine sales in Paris, she was prepared to embark on this endeavor. The estate's vineyards were a family inheritance—her grandfather had been a farmer in Les Mesneux, while her grandmother hailed from Le Mesnil-sur-Oger. In her newly established winery, grapes are crushed and fermented with indigenous yeasts, though selected yeasts are used for prise de mousse. Vinification varies by cuvée—wines from Les Mesneux typically ferment in a 20-hectoliter Stockinger foudre, while those from Le Mesnil-sur-Oger age mostly in 600-liter demi-muids, which she initially purchased new and now reuses."
