This is a concentrated, historical dessert wine that reflects over five centuries of Aeolian agricultural heritage. Crafted by Azienda Agricola Caravaglio, one of the first organically certified estates in Sicily, this wine is a blend of 95% Malvasia delle Lipari and 5% Corinto Nero grown on the volcanic slopes of Salina and Lipari. Nino Caravaglio’s family has tended these wind-swept, pre-phylloxera vines since the 1500s, maintaining an unbroken chain of organic cultivation. While it remains a high-demand artisanal produc, it has seen rising value over the past two years as consumers increasingly seek out authentic, low-intervention passito styles that are hard to find in the USA.

The winemaking process for the 2024 vintage follows an ancient method known as "passillage." The result is a vibrant, amber-hued elixir that offers a "silky" texture and a long, citrus-inflected finish, making it a peerless companion for almond-paste cookies or savory blue cheeses.

Winemaking
Hand-harvested grapes are naturally dried on traditional cane mats, or cannizzi, in the Mediterranean sun for two to four weeks. This natural dehydration concentrates the sugars and develops a complex bouquet of dried apricots, figs, honey, and dates. Following spontaneous fermentation with indigenous yeasts, the wine is aged for six months in a combination of stainless steel and oak barrels to balance its lush sweetness with a refined, saline freshness.
