"The Thymiopoulos family has owned vineyards in Naoussa for several generations. Until recently, the family grew grapes and supplied wineries with their fruit. Upon matriculation from The University of Athens oenology program, Apostolos Thymiopoulos returned to his family’s vineyards and began producing wine for his own label, Thymiopoulos Vineyards and the wine was called Ghi kai Uranos (Earth & Sky). The winery’s first release was with the 2004 vintage, which was a hit across Greece and in Europe. Thymiopoulos Vineyards will be a winery to watch as its production grows."
About the cuvee:
Atma is sourced from various high elevation plots across Naoussa, based on schist and granite parent rock. Though Naoussa is generally considered to be a warm continental climate, these higher elevation sites experience a cooler climate that delays ripening and preserves natural acidity. Winemaking for Atma seeks to preserve its freshness and bright primary citrus and stone fruit flavors, with a cool fermentation and brief aging in stainless steel.
