"Anne-Sophie Dubois has farmed her 20-acre parcel in the lieu-dit “Les labourons,” in the Beaujolais village of Fleurie, since 2007. Together her 18 individual parcels form a natural amphitheater, open to the west. The steep slopes of largely granite soils allow for good drainage and a favorable angle to the sun. The farming methods are organic, with no plowing between the rows, and harvesting is done by hand. Having trained in Volnay, Anne-Sophie brought a Burgundian sensibility to Beaujolais. Her process has evolved in the intervening years, gradually moving from completely destemmed cuvées to whole-cluster fermentation. She values a “non-interventionist” approach to vinification, using indigenous yeasts, and without additives. A minimal amount of sulfur is added at bottling. Her “Alchimiste” ages for ten months, partially in cement cuves and in used oak casks, and is bottled unfined and unfiltered. Profound, elegant, and refined: this beautiful Beaujolais pairs the aromatics and minerality Fleurie is renowned for with a depth of dark-berry fruit and a solid tannic structure."
