Produced from ancient, high-elevation bush vines in the rugged landscape of the Sierra de Gredos (specifically within the Avila province of Castilla y León), this 100% Garnacha is an exemplary model of the "New Spain" movement. Microscopic, isolated parcels of old bush vines (many over 60–80 years old) perched at extreme altitudes of 800 to over 1,000 meters above sea level in the Sierra de Gredos foothills. The vines struggle in incredibly poor, weathered granitic sand and decomposed granite soils.
Winemaking
Hand-harvested fruit undergoes a native-yeast fermentation in temperature-controlled tanks, incorporating a significant percentage of whole-cluster inclusion to add structural stem tannins and peppery aromatics. Extraction is kept incredibly gentle via light pump-overs, and the wine is aged entirely in neutral oak vessels and concrete. Minimal intervention.
