"Originally made in amphora, the Mont de Milieu still has 5 grams of sugar left so has been racked into a foudre to finish off. Unlike the Coteau de Rosette cuvée, the Mont de Milieu is entirely readable. A more classic nose, indeed a lovely fruit, on the fleshier side. Generous on the palate but with fine acidity, the wine opens out perfectly on the second half, this is closer to the finished wine. Drink from 2026-2034. Tasted Oct 2023."

Winemaking
Fermented spontaneously by indigenous yeasts in used Burgundy barrels. The wine goes through malolactic fermentation and is aged on its lees without bâtonnage or racking in barrel for a year or more. Bottling is without fining or filtering, and it is released after a year of bottle aging.
