Neal Martin:
Matured in a combination of demi-muids and regualr barrel, has a backwards nose that unfurls with lanolin, grilled hazelnut and just a hint of smoke. Again, this is quite complex. The palate is clean and fresh, with a lovely texture of orange rind mixed with tangerine that dovetails into a saline finish."

Winemaking
Fermentation and aging can occur in different vessels each vintage depending on the global quantities. For this wine, 228l barrels and 2500l foudres are usually used along with enamel lined tanks in generous vintages. Long alcoholic and malolactic fermentation in old oak barrels. Aged 11 months on the lees without racking or cold stabilization. Usually bottled unfiltered.
