Achillée is a family-owned estate in Alsace committed to biodynamic and natural winemaking, cultivating grapes organically since 1999 and biodynamically since 2003. The winery emphasizes a deep respect for the environment and a minimally interventionist approach, including the use of their bioclimatic cellar constructed from wood and straw – the largest such structure in Europe. They aim to express the unique character of their Alsatian terroirs through spontaneous fermentations and minimal intervention in the cellar.
Primarily Riesling, with a mix of Pinot Blanc, Auxerrois, and Chardonnay. The grapes come from two main areas: gravelly soils in Scherwiller and decomposed granite soils in the northern hillsides of the Frankstein Grand Cru in Dambach-la-Ville.
