Thomas joined his father Jean-March Bouley at the family domaine with the goal of making it one of the finest in Volnay. He took over fully in 2012 and the ascendant path is being paved. He focuses much attention on the vineyard to encourage the vines to be at their peak. No fertilizer is used, no systemic treatments, no green harvesting, and hedging as late as possible after flowering. This gives him a greater number of smaller bunches, with a better skin-to-juice ratio. The goal is an equilibrium where each vine, younger or older, is producing high quality fruit.
The Bouley park of Carelle, also referred to as Carelle sous la Chappelle, is in the Middle of slope, facing southeast, red soils with solid limestone bedrock. Vines were all planted in 1996. Mostly de-stemmed, ged for 18 months on fine lees in barrel (10-15% new oak).
