About the producer:
Established in 1964, the Hébrart domaine has built a reputation as one of the finest producers in the Grand Vallée. Jean-Paul Hébrart has been the head winemaker since taking over for his father in the mid-1990’s and has shifted the focus of the estate to highlighting the individual parcels of old vines located in the estate owned vineyards within the Grand Cru sites in Aÿ, Avize, Chouilly and Oiry as well as their holding in the Premier Cru’s Mareuil-sur-Aÿ, Avenay, Val d’Or and Bisseuil. Each of these parcels are vinified separately in order to understand what each site’s particular vintage has to say. These are champagnes of great consistency and quality.
About the cuvee:
A blend of 65% Pinot Noir and 35% Chardonnay from old vines in Mareuil-sur-Ay and Louvois. The base wine is fermented and aged in stainless steel, and goes through full malolactic conversion before being aged on tirage lees for 36 months. It was bottled with a dosage of 5 g/L.
