Notes from the producer:
"This Cremant de Bourgogne is made with grapes coming from only one plot of 100% Chardonnay. Les Reipes is located on the heights of Saint-Aubin village in Hautes Cotes de Beaune. The manual harvesting always begins when the grapes are strictly ripe enough and they are transported in small perforated cases to keep the whole berries intact and to avoid all risks of oxidation."

Winemaking
Primary fermentation occurs in a stainless steel vat. It then ages on the lees for several months before the addition of a yeast and sugar blend. Secondary fermentation takes place in the cellar where the bottles lay on laths for over 3 years. The bottles are then riddled and disgorged before adding less than 6g per liter of sugar and bottled as Extra Brut.
